Long used by the ancient Greeks as it was believed to be a source of courage, thyme is a delicate looking herb with a penetrating fragrance. In the Middle East, the condiment za’atar contains thyme as a vital ingredient. It is a common component of the bouquet garni and of the French herbes de Provence. Thyme is an essential addition to bean, egg and vegetable dishes. In either its fresh or dried form, thyme should be added towards the end of the cooking process since heat can easily weaken its delicate flavor.
