Similar to curry in India, Mole was the ancient word for the mix. Today, the word Mole refers to the sauce, an emblem of Mexican identity (Mexicanidad) as it is considered the national dish. With dozens of variations found across the country, ingredients of mole generally include chilies, fruits, spices, and nuts combined with roasted and ground into a fine powder or paste. Mole is most traditionally served with turkey, but it is also served with chicken, pork, or other meats and fish such as lamb and salmon. It is a tradition in Mexico to serve Mole and also Pozole soup for special occasions, Christmas especially.
