Cocoa Mole Casserole (Pastel Azteca de Mole)

Ingredients (4 Portions)

6 Corn Tortillas, stale 1 day

4 boneless chicken breasts (approx. 1lb)

1 cup of shredded mozzarella

1/2 an onion thinly sliced

1 Tablespoon Vital Cocoa Mole Spice mix, or more to taste

Salt and pepper to season the chicken

Place chicken breasts into a saucepan and pour in enough water to cover. Place over medium heat, bring to a boil, and simmer until chicken meat is cooked; 10 to 12 minutes. Transfer chicken breasts to a bowl, allow to cool and shred the chicken meat with 2 forks. In a bowl, mix chicken, Cocoa Mole spice mix, vegetable oil, and salt and pepper to taste. Mix thoroughly.
Preheat your oven to 350⁰F degrees. In a baking dish, add 3 tortillas, 1/2 of the shredded chicken, cheese and onion slices in separate layers, similar to a lasagna. Repeat process to form a second and final layer. Cover with aluminum foil and bake for 30 minutes. Uncover during the last 10 minutes of baking.
