Break the eggs and pour in a medium bowl. Gently stir with a fork, and add the Fines Herbes, salt, and pepper in the process.
Heat the butter in a pan at medium heat, until it starts bublbling. Pour the egg mixture into the pan and ensure that it spreads throughout. Cook until the base is set, leaving a bit of liquid in the center. Fold into two and remove from pan. Serve with crusty french bread.
