Jozie’s Chuck Roast

Ingredients

900g  Chuck steak

2 Beef bones

3 Celery branches

1 Onion

2 Garlic cloves, or to taste

3 Medium carrots

½ Leek

1 can of Whole Peeled Tomatoes

500 ml Water

100 ml Red Beer or Red Wine

2 Bay Leaves

½ tsp Thyme

1 tsp Celery Salt

1 tsp Oregano

¼ tsp Cayenne Pepper

1 pinch of Chili Flakes

1 tbsp Paprika

Instructions

1. Season the meat and cube vegetables

2. Sear the meat and bones on all sides in a Dutch oven or large pan with olive oil on medium-high heat.

3. Reserve meat and bones, and sweet spices and vegetables for approx. 4-5 minutes.

4. Put back the meat and bones, still at medium-high heat, deglaze with the beer(or wine).

5. Put the tomatoes and fill with water until the meat is covered.

6. Bring to a boil, reduce heat, and simmer until meat is easy to pull with a fork.

7. Add salt and pepper to taste.

You can top with chopped green onions, fresh Italian parsley, fresh coriander, and lemon.
