Beet Salad

Ingredients

6-7 beets cooked, peeled, cooled

3 tbsp olive oil

2 tbsp white balsamic vinegar

Pepper, to taste

Mixed lettuce

Goat cheese

Vitalgrill Potatoes and Vegetable spice mix, to taste

1 tbsp oregano

Instructions

1. Spread the beets evenly on a plate, add pepper, drizzle part of the olive oil and balsamic vinegar, and sprinkle with Potatoes and Vegetable spice mix and oregano.

2. Lay lettuce on top of the beets and crumble goat cheese on top.

3. Drizzle the rest of the olive oil and balsamic vinegar, and sprinkle some more spice mix.

4. Serve
