Corn Salad (Esquites)

Vital Grill’s Corn Salad

Here’s a simple recipe to add to your summer BBQ. An authentic Mexican corn salad that’s easy to make, refreshing, and leaves you completely satisfied. Some people like to have this as a meal, others like to have it accompanied by a nice, juicy, burrito. The choice is yours to make!

Ingredients (4 Portions)

3 cups of corn kernels

1/2 cup sour cream

2 tablespoons unsalted butter

1/3 cup finely chopped white onion

1/3 cup water

2 tablespoons of cilantro, finely chopped

1 teaspoon Vital cayenne pepper

6 tablespoons crumbled Queso Fresco*

*Can substitute with Parmesan

1 teaspoon chili powder

Lime wedges

Salt and pepper to taste

Melt the butter in a skillet over medium-high heat. Once butter is melted, add the chopped onion and cook until translucent. Add the corn, cilantro, cayenne pepper and water. Cover to cook, stirring occasionally for 6-8 minutes. Check for doneness and do not overcook, corn kernels should be firm. Season with salt and serve in 4 cups. Top with sour cream and cheese. Garnish with chili pepper powder and lime juice. Serve warm.
